JAPAN/ TERIYAKI SAUCE

1 cup soy sauce, 2/3 cup sugar, 1 tbsp Ginger, chopped fine, 2-3 cloves Garlic, minced 1 tbsp  Mirin or Sherry. Combine ingredients in sauce pan, heat to boiling add just enough cornstarch slurry to thicken sauce. Add 1 tsp water to soften saltiness.
