This recipe come from the CULINARY INSTITUTE OF AMERICA, my wife and I were on vacation in New York so we did a side trip up to Hyde Park, New York to tour the campus and have dinner. The flavor of the dressing is what makes this slaw so delicious. INGREDIENTS/ DRESSING/ 4 oz Thai fish sauce 1 cup rice wine vinegar 1 cup Mirin 1tsp red Pepper Flakes 2 oz Pure sesame oil 4 tbsp sugar. Whisk all the ingredients together. MIX/  1 Head of Napa cabbage cut very thin, 1 cup carrots cut julienne 8 to 10 Basil leaves, 1/2 cup scallions and salt and pepper to taste. I love this slaw with salmon.
